INGREDIENTS

For the chicken:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup Mama Dita’s Smoked Jalapeño Charred Pineapple Sauce
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 cup fresh pineapple slices

For serving:

  • Fresh cilantro, chopped
  • Lime wedges

INSTRUCTIONS

  1. Marinate the Chicken: In a resealable bag, combine the chicken breasts, 1/4 cup of the sauce, olive oil, salt, and pepper. Marinate for at least 30 minutes or up to 2 hours.
  2. Prepare the Grill: Heat your grill to medium-high and lightly oil the grates.
  3. Grill the Pineapple: Brush pineapple slices with olive oil and a sprinkle of salt. Grill for 2-3 minutes per side until caramelized. Set aside.
  4. Grill the Chicken: Remove the chicken from the marinade and grill for 6-7 minutes per side, brushing with more sauce during the last few minutes.
  5. Assemble and Serve: Top grilled chicken with pineapple slices, a drizzle of sauce, and fresh cilantro. Serve with lime wedges.

🔥 Serving Tip: Pair with coconut rice and a crisp cucumber salad for the perfect balance of flavors.
