What You’ll Need

1 lb chicken breast or thighs, diced

1 tbsp olive oil

Salt & pepper, to taste

1 small jalapeño, thinly sliced

½ yellow onion, diced

2 tbsp soy sauce

½ cup Mama Dita’s Smoked Jalapeño + Charred Pineapple Sauce

½ cup pineapple chunks (fresh or canned)

¼ cup pineapple juice

1 tsp cornstarch (mixed with 1 tbsp water — your slurry)

Cooked rice or soba noodles, for serving


Method

Brown the Chicken:
Heat olive oil in a skillet over medium-high heat. Add diced chicken, season with salt and pepper, and cook until golden brown on all sides.

Add the Aromatics:
